No Bake Crispy Chocolate Date Truffles

If you have a sweet tooth, then you are familiar with the struggle to satisfy sugar cravings while also sticking to healthy habits. The key to achieving both of these things successfully is to opt for natural sources of sugar. Better yet, go for foods that have no sugar added but offer up a deliciously sweet flavor.

Medjool dates are one of those foods that are naturally sweet. They are often referred to as “nature’s candy”! You can add them to your smoothies, turn them into a paste to use in baking, or chop them in a food processor for a sticky, sweet energy bite base.

This recipe for No Bake Crispy Chocolate Date Truffles only requires six ingredients and a food processor. Made with a base of Medjool dates, these energy bites are enhanced with decadent cacao powder and made crispy with puffed quinoa. If you can’t find puffed quinoa, you can also chop up almonds or another type of nut to achieve a similar crunchy texture.

No Bake Crispy Chocolate Date Truffles

Makes 20 bites

  • 1/3 cup raw walnuts
  • 20 Medjool dates, pitted
  • 2 tablespoons almond butter (or nut butter of choice)
  • 2 tablespoon raw cacao powder
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1/2 cup puffed quinoa, divided in half (or chopped nuts)

In a food processor, add the walnuts. Pulse until finely chopped. Add the dates, almond butter, cacao powder, vanilla extract and salt. Pulse until the mixture starts to form a ball and dates are finely ground. Add ¼ cup of the puffed quinoa and blitz until just combined.

Using a cookie scoop or spoon, form a ball with your hand that is slightly smaller than the size of a ping pong ball. Roll in the extra ¼ cup of puffed quinoa. Place the truffles in an airtight container and store in the refrigerator for optimal freshness for up to one week.
