The potato side dish dupe: Herb Roasted Radishes

If you love the hearty taste of roasted potatoes, then you will easily fall in love with this recipe. Radishes have a naturally crunchy, slightly spicy bite, but when roasted, take on a whole new personality. They become soft and buttery in texture, mild in flavor, and ready to take on whatever seasonings are added to the mix. This Herb Roasted Radishes recipe is a delicious, low carb side dish that just so happens to look stunning on the plate, too.

Radishes are seriously underrated. Most commonly used raw as a garnish or salad topping, radishes provide a refreshingly crunchy texture to any dish.

When roasted, radishes take on a whole new flavor profile. They become soft, buttery, and so mild that they easily take on the flavor of spices or seasonings added to them during the cooking process.

This recipe for Herb Roasted Radishes is super simple, and utilizes seasonal ingredients, including radishes and fresh herbs. With only three steps involved in getting these low-carbohydrate vegetables on the table, give this recipe a try sooner than later!

Sheet Pan Herb Roasted Radishes

Serves 4

  • 1 lb radishes, ends trimmed and halved (left whole if small)
  • 2 tablespoons avocado oil
  • 1 tablespoon nutritional yeast
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Freshly cracked black pepper
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh Italian parsley, chopped

Preheat the oven to 425F.

Clean and prep the radishes. To a large mixing bowl, add the avocado oil, nutritional yeast, garlic powder, salt and pepper. Stir to combine. Add the radishes and toss until well coated. Transfer to a parchment lined baking sheet and spread into an even layer, making sure to spread them out to give them space to roast on all sides. Roast for 15 minutes.

Sprinkle the fresh herbs on the radishes and shake the pan to coat. Roast for another 5 minutes, or until fork tender.
